Bread with Yellow Cheese


The bread with hard yellow cheese, made following this recipe. My review - delicious, yet too time consuming and I personally prefer bread with white feta cheese. Still, I'm putting down the recipe for future reference.
Ingredients:
  • 600 g flour
  • 250 ml milk
  • 4 eggs
  • 60 g olive oil
  • 1 tsp salt
  • 1 tsp sugar
  • 200 g grated yellow cheese
  • 11 g instant dry yeast


Make dough. Divide it into 7 balls. Spread 6 of the balls into round sheets, cover with olive oil. Cut into 16 pieces, place grated yellow cheese into each piece and roll. Arrange the rolls in the baking tin.



Use the seventh piece of dough to fill the gaps the one big ball and 16 small balls of dough.


Leave for an hour to rise in a warm place (oven at 40-50C).


Glaze with the yolk of the forth egg, a tsp of milk and a tsp of olive oil. (optional) Spread with seeds (sesame, poppy, sunflower seeds).


 Bake in a preheated oven at 180C until golden brown. Leave on a rack to cool.



And while the dough was rising, I quickly baked this vegetable dish. I'm writing down the ingredients for the sauce as I know I'll be making this again many times with various vegetables. For this dish: 250 g broccoli, 250 g cauliflower, 250 g brussels sprouts, stewed with olive oil. For the sauce: 4 eggs, 100 g cooking cream, 100 g grated yellow cheese, 100 g crumbled white cheese, 2 triangles of processed cheese, olive oil to grease the baking dish, spices (pepper, rosemary, oregano, savory, thyme). Baked at 220 g until ready.

Round Loaf with Cheese


Another round bread I made, of which I am secretly very proud :)
I was looking for a interesting recipe and methods of bread decoration and I came upon this wonderful blog.
It was pure serendipity that the dough I liked was refrigeratable. I began making the bread in the late afternoon, in between dinner preparations and when the dough was finally ready to be manipulated I was too tired. So, I covered the bowl with stretchy foil and left it in the fridge for the night. On the following day I had the dough ready to be made into beautiful fresh and delicious bread just in time for dinner.

Ingredients:
  • ¾ cup of milk
  • ¼ cup of yogurt plus a pinch of baking soda
  • 10 g fresh yeast
  • 1 tsp salt
  • 1 tsp honey
  • ¼ cup of oil
  • 1 egg + 1 egg white (1 yolk + 1 tsp water + 1 tsp oil for glazing)
  • 4 cups of flour
  • 400 g white cheese
1 cup = 240 ml

Activate the yeast with1/2 cup of  lukewarm milk, honey and 1 tsp of flour. Sift the flour and add the ingredients and the starter. Knead the dough and leave it to rise for an hour. Knead the dough again to push the air away. At this point you can leave it covered in the refrigerator for a couple of days.


The preparation: cut the dough into four equally sized balls, spread each ball flat and cover with oil and cheese. Do not grease or cover with cheese the last sheet. Cut into 16 pieces some 2-3 cm from the center of the circle. Rotate each couple of pieces - the right one clock wise, the left one of the couple - anticlockwise. Place in the baking dish, cover and leave for an hour to rise. Glaze and bake in a preheated oven at 180 C.


Because of the solid amount of cheese I did not even attempt to replicate Diana's amazing decoration (her bread looks like a piece of art, really!). But I did take care not to overbake it this time and I actually found a little trick for better baking - cover the dish with aluminum foil the last 15 minutes before taking the bread out of the oven. The crust was perfectly baked and the inside was very fluffy and thready.


Heartily recommend that recipe, the bread was delicious hot and cold too.

Sweet Round Bread


This is the slightly sweet round bread I baked last night. I'm putting down the recipe because I'm very bad at keeping notes and sometimes links to internet sources tend to be unreliable. On several occasions these days I tried to follow links I've saved only to find that the authors have removed the contents I've been looking for. The dough is based on this recipe here.

 Ingredients:
  • 10 g fresh yeast
  • 1/4 cup of sugar
  • 1/4 cup of oil
  • 1/2 cup of warm water
  • 1/2 cup of milk
  • 1/2 teaspoon of salt
  • 1 egg + 1 egg white (1 yolk + tsp milk for the glazing)
  • 4 1/2 cups of flour

Mix the milk and the warm water. In a small  bowl mix the yeast with 4-5 tablespoons of the diluted milk, 1 teaspoon of sugar and 1 teaspoon of flour. Leave the starter to rise for 20 min. Meanwhile in a big bowl sift the flour, add the eggs, the sugar, oil, salt and milk + water. Add the starter. Knead the dough.


Leave it for an hour to double its volume. I put it in the oven at 50C. Knead the dough again. This time I used a different method for kneading - picking the ball of the dough and throwing it to the table for 100 times (I counted :))). Cut it into three equal balls and spread the balls flat. Place the flat circles on top of each other and cut into eight pieces some 2-3 cm from the center of the circle. Cut each piece into three and braid. Leave for about 30-40 min to rise again. Thus there are three risings of the dough which makes it very fine and thready.


Glaze, sprinkle with sesame seeds and place in a preheated oven at 180 C. Bake until the crust turns golden brown. (Do as I say and not as I do :)) - I got distracted and overbaked mine a bit.)



This sweet bread is perfect with honey, but the boys tried it with white cheese and claim that it's as equally delicious.
