Cake with Coconut Flakes
A recipe for a cake I came up with for Christmas. Our guests loved it so much that I ended packing the remains for them to take home :) I've been making it quite often since and I've been meaning to put down the recipe, but hadn't taken decent pictures until today.
Ingredients:
2 eggs
200 g sugar
45-50 g oil
200 g yogurt with a pinch of baking soda
200 g flour with 10 g baking powder
25-30 g coconut flakes
50 g crushed walnuts
50 g raisins
cinnamon and ginger
Preparation: Beat the eggs with the sugar. Add the oil, the yogurt, stirred with the baking soda and the flour, sifted together with the baking powder. Add the coconut flakes, the walnuts and the raisins, flavour with cinnamon and ginger. Pour the patty in a baking tin (mine is 24 cm in diameter), covered with baking paper and bake at 180C in a preheated oven. Serve with coffee, milk or tea.
And here's what the courier brought today - a guide book on waterfalls in Bulgaria and a map of all eco trails and tourist routes in the country. Such a pity there are so few of these near Sofia and we've been to all of them, but I'm beginning to plan our expeditions to farther interesting places worth visiting. Oh, come spring!

Your coconut cake looks tasty sweet. And funny how you had coconut this past weekend as I did too! But in a different, sweet way. I like your new purchases. You have a wonderful sense of adventure. I want to come hike with you.
