Coco Cake

A very delicious cake I made last night, experimenting with my trusted cake recipe.

50 g desiccated coconut
150 g sugar
240 g flour
3 tbsp oil
2 eggs
250 g yogurt
10 g baking powder
1 tbsp instant coffee or 2 tbsp cocoa powder

Beat the eggs with the sugar until creamy. Add the oil, the yogurt, mixed with the baking powder, the flour and the desiccated coconut. Spread 3/4 of the mixture in a tube cake tin, covered with greased baking paper. Add coffee or cocoa powder to the remaining 1/4 of the mixture and spread on top. Bake in a preheated oven at 180C until the toothpick test indicates that the cake is ready.

Serve cooled with coffee or milk. Enjoy!
