Brown Bread


I made this bread twice with a few modifications the second time and it was so delicious, that I'm writing down the recipe:

Ingredients:
500 g brown flour (or 200 g brown flour, 200 g white flour, 100 g wholegrain flour)
300 ml warm water
2 tbsp olive oil
1 tbsp honey
1 tsp salt
7 g dry yeast
80 g seeds (I'm using a mixture of sunflower, sesame, poppy and linseeds)



Activate the yeast in 50 ml of the warm water, adding 1/4 tbsp of honey and a tbsp of flour. Add the olive oil and the rest of the honey to the warm water. Sift the flour and mix it with the salt and the seeds. Add the warm water mixture and the activated yeast to the flour and mix until you make dough. Knead it a few times and leave to rest until it doubles its volume. Take the dough out of the bowl and knead for 5 min. Place in a baking tin and leave to double its volume again. Glaze with a tbsp of water and olive oil. Spread poppy seeds. Bake in a preheated oven at 180C until ready. The crust is crunchy and the inside is very delicious.
